For many years, the origin of Cabernet Sauvignon was not clearly understood and many myths and conjectures surrounded it. Many believe it refers to a wild ‘vitis vinifera’ vine native to France. In the 1970s, the Coonawarra region first brought international attention to Australian Cabernet Sauvignons with intense fruit flavors and subtle minty notes. In the 1980s, Australia followed California's contemporary trend in producing lighter, more "food friendly" wines with alcohol levels around 11-12%; by the early 1990s, the styles changed again to focus on balance and riper fruit flavors. Today Cabernet Sauvignon is the second most widely planted red wine grape in Australia, following Shiraz with which it is often blended. It can be found in several wine regions with many large producers using grapes from several states.
This wine displays vibrant dark berry fruit intermingled with herbaceous and toast oak characters. Some chocolate and mocha characters indicate it’s from the McLaren Vale regions. Rich mouth filling flavours of cassis, plum and herbaceous notes combine with well integrated oak. Grippy tannins and a lingering finish complete the wine. An elegant Cabernet Sauvignon which will cellar well for 4-5 years.

Unlike more aromatic red wine varieties like Cabernet Sauvignon or Pinot Noir, Tempranillo has a relatively neutral profile and now it is often seen blended with Shiraz. Tempranillo is an early ripening variety that tends to thrive in chalky vineyard soils, or it can be aged for extended periods in oak where the wine easily takes on the flavour of the barrel, a perfect procedure to when producing port wine.
Brilliant, bright ruby red with a purple hue, aromas of ripe cherries and Satsuma plums burst forth, balance by hints of nutmeg liquorice and cinnamon spice. The palate is soft and lively; combining mulberry fruit and spice of cool climate Shiraz. With sweet plum savoury and dry tannins from the derived Tempranillo. Enjoy with Vasarelli’s meat dishes.

Merlot is a dark blue coloured wine grape variety, the name Merlot comes from the French word ‘merle’, meaning blackbird, a reference to the colour of the grape. Along with Cabernet Sauvignon, Cabernet Franc and Malbec, Merlot is one of the most widely planted grapes in the South Australian wine regions. Merlot is also one of the most popular red wine varietals in many markets. This flexibility has helped to make it one of the world's most planted grape varieties. Planted around the same time as the Cabernet Franc, the Merlot was first released under the Vasarelli label in 1995.
Merlot wines are usually medium bodied with hints of berry, plum and currant. The Merlot has a dark blue colour with crimson hues. The nose picks up a dark chocolate and ripple plum flavour with a strong spicy oak. Medium bodied with fresh dark berries firm yet fine tannins add structure, it is a wine that drinks well now and will so do for up to five years of age.

Rose wines, often referred to as ‘blush wines’ are not truly red, but have enough of a reddish tinge to make them assuredly not white. The actual colour varies depending on the grapes involved and often may seem to be more orange than red or pink. Rose wines may be produced in a number of different ways depending on the desired results, here at Vasarelli’s, the Rose is made from Cabernet Sauvignon. Most Rose wines are the result of crushing the red grapes rather early on, so that they are not able to impact their colour (or much tannin) to the wine. These wines are in most respects white in character and flavour, with only the tinge of red and some subtle taste differences belying the difference.
Freshness is the most immediate experience when tasting the Cabernet Sauvignon grapes in the vineyard prior to picking and its freshness maintained during fermentation and bottling. Cabernet sauvignon was the obvious choice for making a Vasarelli Rose style wine. The flavours are of a chocolate mocha and herbaceous notes with a lifted mid palate of plums and cherries. That while great drinking on its own, it would be an ideal combination with seafood, simple pastas or cold meats. Pat Vasarelli’s homemade sausages are ideal.
